Thanksgiving wouldn't be the holiday it is without someone to work all that magic in the kitchen. Chances are good that person gets inspiration from the many chefs found on TV shows and book shelves. We fell for Top Chef's first out gay winner from the very first episode with his calm manner, that sweet smile and his detailed pastry technique. For this fan of foamy dishes, however, Yigit finished melting my heart with talk of making souffles for his boyfriend.

At its best, molecular gastronomy — where chemistry is used to create new ways to serve food — can be like a trip to a gourmet playground, where each course can deliver a surprising combination of flavors, appearance and texture. Achatz has given guests at his Alinea restaurant dishes such as a cake spun like cotton candy and an edible menu, which adds an impressive imagination to his boyish good looks.
